Kumquats and whisky!

I opened one of the jars of my Kumquat and Monkey Shoulder Whisky Marmalade yesterday morning. I made it about two months ago, and because I added a little whisky I thought it would be better left to mature a little.

Well, I could resist no longer! Beautifully rich, sweet, a hint of bitter and the delicious mild aftertaste of the whisky. It really was a little taste of sunshine!!

The remaining jar I shall leave until Christmas and see how it reacts to a longer maturation period. In the meantime, I probably need to start another marmalade batch. I’m thinking an orange and Cointreau marmalade perhaps. If you have any marmalade recipes and ideas I’d be pleased to hear about them!
