The Big Gay Al's Food Adventures
Simple but effective and healthy, this is a low fat, gluten free southern fried chicken type dish.
I mixed course polenta with a little grated Parmesan, salt, pepper, paprika and parsley. Dredge the chicken breasts in flour, then beaten egg and finally the polenta mix. Place on a grill tray and spray or brush lightly with with oil. Place under a preheated grill for around 10 minutes each side.
Here I have served it with mashed sweet potato with coconut oil and green beans.
