Yesterday I found a Pinterest link on line for something called Monkey Butter. How could that not get your attention eh?! Intrigued I followed the link and found the recipe. Well, I had most if the ingredients ready and so of course I made a small batch!
The ingredients are simple, just banana, canned pineapple in juice, ground coconut, sugar and a squeeze of lemon juice.
The method is even simpler – just pop it all into a heavy based pan and bring to a fast boil and then simmer until it’s the consistency you want.
I added a little extra coconut, a little less sugar and let it reduce for about 30 minutes until it was gloopy and thick as I’d expect a fruit butter to be.
Sealed in jars, it needs to be kept refrigerated. It’s super sweet and should be used in moderation, but it’s delicious mixed with fat free Greek yoghurt, on toast or no doubt a multitude of other uses!

It’s incredible! I saw people talk about making a version with mango in the comments on your page so I will try that next!
